15 minutes


  • 2 cucumbers
  • 1 lemon (juice)
  • 1 clove garlic
  • 1 tbsp dill pickle juice
  • 8 mint leaves
  • 1/2 tbsp salt
  • 1/2 tsp black pepper
  • 1/2 tbsp olive oil

1.) Peel cucumber.

2.) Blend all ingredients in blender or food processor.

3.) Put sauce in refrigerator for 30 minutes to allow the flavors to marry.

*If  your tzatziki sauce is too thin, place sauce into a coffee filter on top of a mesh strainer. Most of the water will leak through after roughly 30 minutes.  Some like to remove the juicy, seedy part of the cucumber to avoid a sauce that is too liquidy. Either way works fine.
